Pecan Waffles: A twist on the Classic

These pecan waffles are super delicious. They add sophisticated flavors to a classic breakfast menu item. They are delicious with butter, maple syurp, or cinnamon-sugar icing.








This recipe yields 4 large Waffles. The addition of the pecans makes these waffles pretty hardy especially if you plan on serving these with the addition of eggs or bacon. 1/2 of a waffle is plenty. The addition of the pecans also adds additional protein they help to keep you fuller longer.








Ingredients

  • 1 cup pecans toasted

  • 1 1/2 cup bread flour

  • 1 tsp salt

  • 1/3 cup sugar

  • 1 1/2 tsp baking powder

  • 1 egg

  • 1 cup of milk

  • 2 tsp vanilla extract

  • 1/4 cup melted butter

  • 1/4 cup vegetable oil







Directions

  1. Preheat oven to 350 degrees Fahrenheit

  2. Place Pecans on a sheet pan and toast in oven 3-5 minutes, remove and allow to cool

  3. Preheat waffle iron

  4. Combine dry ingredients flour, salt, sugar, and baking powder, whisk to combine

  5. In a separate bowl mix wet ingredients: eggs, milk, vanilla extract, 1/4 cup melted butter, vegetable oil, whisk to combine

  6. Pour wet ingredients into dry ingredients and mix until combined.

  7. Chop pecans to desired consistency. add 3/4 of the mixture to the bowl of waffle mix and fold in pecan to ensure even distribution.

  8. Pour waffle mix into the heated waffle iron. batter will be thick, use the whisk to spread around on the waffle iron prior to closing the lid

  9. cooking time varies based on waffle irons. my iron took 2-3 minutes to cook each waffle.

  10. Enjoy with your favorite toppings.
